One thing that I do is add a top coat every day. It works for a few days but nail polish is eventually going to chip.
Chipping can also be cause by doing a lot of things with your hands (obviously). So maybe do more things with your left or right hand not with both. If that makes sense.

Like with anything some brands just work better for some then for others! I have a huge collection of Essie and never have and problem with chipping - But I know many how have problems with many of the essie polishes chipping. I have problem with OPI, which most people love, but they often chip on me!
Also as Qwaserght said some colors are just more likely to chip then other :)

I would expect more from their polish. These days, I cherish every dollar and if I'm going to invest my time, energy and money, I demand more from my polish. I would get a refund.

I've also had a not-so-great experience with Essie
But you should totally try Zoya they have a great formula and a lot of nice colors
I love their matte colors
