I think that it depends on the brand. I have tried Essie Blanc and that seems to be thinner. I have recently picked up the Sally Hansen Xtreme Wear Polish in White On and it seems to have a good formula that you can build up-I would check this one out! :)

I only use Zoya nail polish, it's the only brand I've found that doesn't chip on me while I work (I work unpacking stock and doing a lot of heavy lifting, pallet Jacks and all that jazz)

I find the NYC white nail polish to be a lot thicker than the lilac polish I have of the same brand.

Based on my experience they are.
But maybe they're some brands that don't thick so much.
