Beauty Detox: Energy Soup

Come winter time, soups are one of the most delicious ways to warm up. But forget the usual flavors like tomato, vegetable, and pea—cauliflower soup is the one to sip this season! Celebrity nutritionist Kimberly Snyder gives us a recipe for cauliflower energy soup, a delicious meal that’s high in vitamins and nutrients to build your immune system and perk you up, so you can battle the cold months with extra vigour. "Cauliflower is high in vitamins B and K, and is known to be a potent anti-inflammatory food," says Kim. "The avocado in the soup adds filling fiber, minerals such as potassium, and provides moisturizing fats to your body. Enjoy it at room temperature, or heat it up for lunch!"

Cauliflower Energy Soup

  1. 1 medium cauliflower head, with outer green leaves removed and chopped into pieces
  2. 3 Tbsp organic, unpasteurized miso paste
  3. ½ ripe avocado
  4. 2 cups filtered water
  5. Juice of 1 lemon
  6. 2 ½ Tbsp low sodium tamari
  7. ½ tsp turmeric
  8. Chopped parsley, as a garnish
  9. High quality sea salt, to taste

Add all the ingredients to a blender and blend until smooth. If you’d like a thinner texture, try adding a bit more water.
