Does anyone have a diagram or a pictorial on how they recommend cutting layers in long hair? I have a specific way I do it now but I'm always open to new options!

The easiest way to do so is make a pony tail in the centre of head.A really high pony tail, as in quite near your forehead. Make sure you make it right in the middle. Cute your damp hair in a straight line. Open your hair and there you have it :)
