There are a lot of good cameras out there these days. My favorite that I've had throughout the years is the Canon PowerShot SX120is.. In terms of apps, Aviary and Viewmatic are good editing apps. InstaCollage makes great collages, however it will be in square format as it's for Instagram. eZy Watermark Lite is a nice app for watermarks. (These are all on the iPhone, not sure about Android if that's what you have.)

Before I got a smartphone I used my Kodak Easy Share and it turned out to be great. If you take it on the phone then there are apps. foto rus, perfect 365, and pics art. you can get an app on the phone to do watermark or add your signature. then there is picasa on the computer you can change pics a bit and also add text.
