I don't see why not? There's no rules in makeup so you may as well try it out and see how it goes :)

Personally, I've had really good experiences in blending foundations together, in addition to hearing positive feedback from friends who've also tried the same thing.
I think it ultimately depends on the substances of the foundations, how they're applied, and what their individual features are (such as level of coverage, heaviness of the products, finish type, etc.) that will determine whether or not you'll be able to achieve your desired result by following this process.
If you have combination skin, you could also try applying a dewier foundation on the dryer parts of your face, whilst opting for a mattifying foundation on the sections that tend to get oily throughout the day. The same goes for coverage - using a lighter foundation for areas that require less coverage and vice versa.
Of course, mixing them together to create a completely new product is a great choice as well; just be sure to keep in mind the factors listed above, as they will help you in finding the perfect foundation match for your personal circumstances :)
