So I'm wanting to change my currently blonde hair to this grey colour but wonder about how much upkeep and maintaining is required? What will I need to do to get and keep this colour?

You'll have to bleach your hair to basically white to achieve that shade of gray.
Use a color safe shampoo (I love the Bumble And Bumble Color Minded Shampoo) and wait as long as possible between washings, dry shampoo will be your best friend (I use the Not Your Mother's Clean Freak Dry Shampoo).
I highly suggesting looking into Overtone. It's a specialized conditioner that'll help refresh your color so you can go longer between touch ups. I know they have a silver shade which I'm sure you can use for gray.

I would have to disagree on bleaching your hair to white.
I've colored people's hair grey quite a few times and this particular shade isn't silver so you don't need to bleach it to a level 10 you can actually be around a level 7 since this color is around a level 7 or 8 but a hair color will help you jump up another level.
The best way to maintain it is avoid washing your hair, basically.
When you do wash your hair, use a silver shampoo like the Matrix one. It'll add a little more blue that would normally be lost from washing.
I wash your hair about only once a week if you can, other days use dry shampoo. When your hair is a little more greasy you could just wear it up and such.
It should last and stay gray for quite some time. Eventually you'll have to refresh your hair color by recoloring because despite a silver shampoo, it's hard to make sure you're toning all your hair evenly so eventually you my get brassy areas where you'll either need to spot-tone with shampoo or just recolor it with the gray

I recommend matrix blue shampoo. Also you can mix ion brights titanium hair color mix with white hair conditioner, as a color refresher leave it for 20 mins.
