What is the point of contouring? From what I've gathered it creates the illusion that you have cheek bones or something. Also how do you contour? What areas do you hit etc and what's the best palette or whatever for a beginner

That is exactly what it does. It 'sinks' in certain areas of your face to give the illusion of a slimmer face. Most people, myself being one, contour in the hollows of their cheeks, focusing the heavy handed work closer to the ear. I also add some to my temples which adds to helping with the cheekbones. I also put some on my jawline which helps make it look stronger. I occasionally contour my nose to make it look slimmer. You do this by starting at your brow and curving down to the sides of your nose and bring it around the tip above the nostrils. Just find the sunken in parts of your face and exaggerate them. The same thing applies to highlighting, find the higher points of your face and add illumination. BH cosmetics has a lot of good palettes but single bronzers I have come to love include the E.L.F. bronzer quads, the Rimmel London Natural Bronzers. I have heard great things about the N.Y.C. ones too.
I hope this helped. :)
