I used to do this a lot! Maybe it's not the way you're supposed to but it works.
collar: cut it between a fourth to a half inch wider than you want it, and gently pull. It will automatically roll up and cover the fact that it's seamless. Also just makes it look better to me lol
Shoulder & Sleeves: cut off the sleeves at the seam and sew them smaller.
Cut off the excess where the shoulder seam is to low until it's as high as you want it. Then sew the sleeve back on. Be sure to put the seam on the inside lol
P.S. if you also wanted the body of the shirt skinnier, after you've taken of the sleeves and fixed the shoulder of the shirt you can take it on both sides. I hope I explained right, good luck!
