So I'm going to be starting cosmetology school. I want to do hair and makeup. How should I go about getting more certification in makeup? Should I do makeup classes to build up my knowledge and credibility? Such as workshops? Any thoughts are greatly appreciated :)

MAC offers courses at master level and other workshops. Also I recommend that you practice outside of classes on friends and families and take pics for your portfolio work. While in cosmo school you can get some side gigs to build up on your knowledge. You can do 1 or 2 free shoots to add nice pics to your portfolio.
