And how do you do those hair twists? Every time I try, it comes undone :/

They probably come undone because you aren't twisting them in the opposite direction. The two sections of hair are twisted (just the chunk of hair) in opposite direction. Then, you can just twist them normally. Let me see if I can find a good visual. Honestly, just search how to do it on YouTube. :-)
