If I straighten my hair only once a week and use a heat protectant will it still grow. And not break.

Yes! I straighten my hair everyday and I have long hair! It won't damage it ; remember , hair grows from the top of you head.

I know hair grows from the top but the heat can damage the ends and cause breakage so that's why I was wondering.

Ya just be careful and only hold the ironing in one place for up to 6 seconds. Maybe less.
