I really want to be a MUA after years of skewing towards a career I wasn't happy in, but while I'm saving for makeup school I really want to get involved and volunteer doing assistant work- just so I'm making progress!
Would makeup artists be interested in an assistant who has no experience, do you think?
Are there any other good websites/ forums which could help?

Hm. I was definitely in your shoes. Now I will say good for you that you want to go to school. :) that gives not only the know how but the theory on why you do certain colors, look, and effects.
I would say youtube is a nice place to look up different beauty gurus. And even here is nice too.
Makeup artist and most beauty professionals love to take someone under and teach the craft. It gives us a sense of pride that we can touch a potential like that. So don't be afraid to take to any makeup artist that you see. Shoot I did!
Also I don't know if you have time but get a parttime job at a beauty counter. this gives you a look on different skintones and features. The best way to learn is to do.
