You could try adding a few hair pins into the donut :) but I'm sure if hair is sticking out, it works just as well because sock buns look so cute messy

Try curling your hair before the bun, then the hair will wrap better into the sock. sometimes I do a bun the with second day hair after I have curl it, it soo much easier. also remember it doesn't have to be perfect. (:

The best look without any hair sticking out and it to look quite tight and formal finished is if you put your hair up wet just from the shower and it will look perfect

I do it pretty similar to Vanessa's pic, its jsut one of those things that takes practice too. Its impossible for my hair to roll around the sock onto my head, and I'm a cosmetologist! Keep working at it until its right for you. It might require growing out some layering too.
