I'm pretty sure this holds true with any sort of hair mask. over moisturizing your hair can cause it to lose its structural integrity entirely and basically become mush. BUT, you'll absolutely know if this is happening; it should be pretty obvious. If your hair is still in good condition, don't worry about this.

I don't know that I agree about your hair losing it's structural integrity, because coconut oil is not a protein treatment, it's a conditioning oil. I think the worst that would happen is your hair would get greasy. BUT, using a protein treatment (especially if your hair doesn't need it) can definitely overprotenize your hair and cause it to become brittle and or mushy.

Too much moisture can cause hair to be brittle due to lack of protein. Hair is all about balancing proteins and moisture. Overdoing either one will be bad for the hair.

Yeah, the only issue would be that your hair may be heavy/weighed down or have a greasy feel.
I don't think you should have an issue with using a lot of coconut oil, it's mostly just going to condition your hair.
I have read that coconut oil can be a tad drying, not sure how accurate that is though.
Just make sure you're getting a protein treatment in as well.
Conditioning products just work by softening your hair and can help keep it moisturized if you use it on damp hair(it'll help by "locking in" the water"
When you only moisturize/condition, your hair will be soft but it'll break easily if you're not giving it some protein but
Too much protein and hair can end up feeling hard and breaks off and it more noticeable due to how the hair feels
