Ok so I'm getting my hair done on Saturday and it's going to be white so it's goig to be damaged and right now I have my entire head covered in seriously almost an entire jar of coconut oil and I'm wondering if there is anything else I should do to prep my hair and make it so it will be less damaged when I go?

Don't wash it before you go get it dyed. Like make tonight the last wash until Saturday.

Getting your hair dyed while dirty is actually more to protect your scalp from the chemicals :) not your hair. But besides conditioning treatments not much, just avoid heat with or without heat protectant for a while because bleaching to white takes a lot out of your hair.
