What I do for a fancy but still kinda casual updo is curl all the hair and just pin up with bobby pins in differrnt areas just make sure the pins are hidden! I do that in my cosmetology class for updo evals and everybody loves it.
Also another easy updo is curl all your hair first, then take a vertical section of hair, from one side (right or left up to you), from the top of your part all the way down to your nape, split into three sections, and start french braiding - the only differnce is the braid lays horizontal and you only add hair to one side (the side facing the top). Then once you reach the end you can either ponytail it, continue braiding til you reach the ends, or what I do is actually tuck the rest of the hair under the braid so its hidden, another thing that would be cute is continuing down to the ends with a fishtail braid.
I really hope that all made sence, its really hard to put into words and I really wish I had a picture! :-)

Oh another way of explaining that second one is kinda like doing a waterfall braid down at the nape but without dropping pieces and with curled hair...maybe that makes more sense? wish I would have thought of saying that before I wrote my last comment lol
