Stuffed Artichokes:
4 large artichokes
1 box Stove Top stuffing
6 cloves garlic, minced and sautéed
1 can black olives, sliced
1 tsp oregano
1 tsp basil
Pinch of red pepper flakes (optional- foxy says no)
3/4 cup grated pecorino romano
Olive oil
6-7 whole garlic cloves
4-6 cups chicken stock
1.Wash and prep your artichokes. Cut tops and stems off and gently pull the leaves apart to open.
2.Prepare Stove Top according to box instructions. Transfer to a large bowl.
3.Add olives, basil, oregano, pepper, cheese and sautéed garlic to the stuffing. Add olive oil as needed to keep it moist.
4.Drizzle olive oil (about 1/2 tbsp) over each artichoke. Use a spoon, or hands, to stuff each artichoke, making sure to push the stuffing into the leaves on the side.
5.Place artichokes in a large oven safe pot with high sides. Fill halfway with chicken stock. Add whole garlic cloves around the pot. Cover, bring to a boil over medium/high heat then reduce to a simmer. Add more stock as cooking if needed because it will evaporate. Simmer until leaves are tender, about 1-2 hours
6.Remove cover and place artichokes under broiler until stuffing is lightly browned and crispy.
