Lexis Stuffed Peppers:
4 bell peppers
1 lb ground beef
1.5 cups brown rice, cooked and cooled
1 egg
1 cup grated pecorino romano
1 tsp oregano
1 tsp basil
1 tsp fresh parsley
1.5 tsp salt
1/4 tsp black pepper
1/2 tsp red pep flakes
6 garlic cloves, minced and sautéed
2 tsp olive oil
1/2 hot pepper, finely diced (optional)
For the sauce:
2-3 tsp olive oil
1/2 large onion, finely diced
5 cloves garlic, sliced
1 can crushed tomatoes
1.5 tsp basil
1.5 tsp oregano
1 tsp fresh parsley
1 tsp salt
1/2 tsp crushed red pepper
1/4 tsp black pepper
1/2 hot pepper, finely diced (optional)
shredded mozzarella
frozen peas, defrosted
Foxys Stuffed Peppers:
4 bell peppers
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1/2 cup brown rice, cooked and cooled
1 tsp oregano
1 tsp basil
1 tsp fresh parsley
1 cup grated pecorino romano
1 tsp salt (not if you’re foxy)
1/4 tsp black pepper
2 eggs
1 cup Italian breadcrumbs
6 garlic cloves, minced and sautéed
1 can sliced black olives
Shredded mozzarella
Frozen peas, defrost
For the sauce:
2-3 tsp olive oil
1/2 large onion, finely diced
5 cloves garlic, sliced
1 can crushed tomatoes
1.5 tsp basil
1.5 tsp oregano
1 tsp fresh parsley
1 tsp salt (not if you’re foxy)
1/4 tsp black pepper
Preheat oven to 400F
Mix all filling ingredients in a large bowl and set aside.
Cut and clean out bell peppers. Save the tops of the pepper.
Fill half of each pepper with meat mixture.
Add a sprinkle of peas and shredded mozzarella. Fill the rest of the pepper and put the top of the pepper back on.
Set aside.
For the sauce, heat olive oil in a cast iron pot or dutch oven.
Add onions, garlic, and crushed red pepper/hot peppers if using. Sautee until slightly browned but be careful not to burn the garlic.
Add crushed tomatoes and spices and simmer for about 15 min.
Place peppers into sauce and bake until the peppers are fork tender, about 1 hour and 15 min. Internal temperature should be about 150F.
Top each pepper with shredded mozzarella and broil until melted and bubbling.
