10 quarts water
1 lb beef jerky (tasajo) any meat you like.
1 3lb hen, cut up
4 ears corn, cut in fourths
2 lbs malanga (a yellow taro) peeled, cut in chunks
4 green plantains (soaked in lime juice) peeled, cut in chunks
2 lbs yuca (frozen or fresh) peeled, cut in chunks
2 lbs Cuban boniato (sweet potato, not yam) peeled, cut in chunks
2 lbs pumpkin, peeled, cut in chunks
1 lb ñame (a white taro) peeled, cut in chunks
1 lb guagui (a greyish taro) peeled, cut in chunks
4 ripe plantains, peeled, cut in chunks
4 limes for soaking green plantains
Salt and freshly ground pepper to taste
Sofrito
pollo o carne de puerco
calabaza
malanga
boniato
yuca
plátano
maíz tierno
cebolla, ají pimiento, ajo, comino,
sal
puré de tomate
Elaboración
1-Primeramente pelamos las viandas y las lavamos bien
2-Luego la picamos en trozos pequeños y la vertimos dentro de una olla
3-Le agregamos la carne ,que en este caso utilice un muslo de pollo con el encuentro y también le agregamos las sazones picadas ,
4- Después de tener todo en la olla le echamos agua tratando de que todo quede cubierto en ella y le agregamos sal al gusto, ah también la mazorca de maíz la picamos en tres o cuatro pedazos según el tamaño de la mazorca
5-Si lo hace en olla de presión debe de darle de 10 a 15 minutos y luego bajarlo del fuego y aplastar con un cucharon las viandas y volver a poner al fuego para que este logre su punto exacto ,
6- Esta rica caldosa o ajiaco cubano como lo llaman muchos puede ir acompañado de lo que usted desee es a gusto del consumidor espero les quede rico!.
