My esthetics teacher said that when applying someone's makeup, you can't touch their face because the oils in your fingers will leave a finger print on their face that a camera would pick up. I find that really hard to believe, and google is failing me.
Have you heard that before/know if it's true?

Maybe if you didn't set the makeup and used enough pressure, sure.
Always have a powder puff and have the ribbon around your pinky. Then you can sorta rest your hand on the face with the powder puff in between you're clients face and the side of your hand, protecting their face from getting smudged and such.

I've left fingerprints on clients before (I redid the areas I smudged)! Especially if they've just been waxed. It's not going to happen every single time you touch their face, but yes it does happen. And puffs are very professional to use in the first place

Yes it can. I know some muas like to use a powder puff as to not smudge the foundation.

Thats odd.. I agree with Aurora on the fact perhaps the makeup wasn't set properly but the transferring of oils in general can cause breakouts so its best to not touch the clients face as much as possible for both sakes.
