*** My HISTORY: The summer of 2015, I decided to eat a plant based vegan diet, in order to “heal” fibromyalgia, a chronic illness. Along the journey the learned some amazing things about veganism, and its impact on my health and the world. In short, I was able to stop taking the medication I was prescribed, but i had to continue my low to no oil, diary and meat free, high carbohydrate diet. Many family members and friends disagreed, and worried that i would gain weight and become sicker. Within TEN days, I lost weight AND FELT better. Everyday, life became easier for me, and I was able to enjoy the people around me once again! I am NOT trying to persuade you to become vegan, but like always i want to inspire you, and show, through my actions, that life can be better if you are battling with a chronic illness or need to loose weight. The book that save my life is the Starch Solution by Dr. John McDougall (this is not sponsored and i was not paid for say that).

In this What I Eat! French Toast, Fries + Vegan Friendly video, I shared some of my favorite foods! The french toast literally taste like a Cinnabon! I used cashew milk vs dairy and used sourdough bread, but i like regular bread better for this recipe. I also used a non stick plan to avoid using oil. This entire meal was meal was 2 grams of fat, and it kept me full! What I eat everyday is based on how I'm feeling! I got this recipe from Kim, TheChicNatural, here on youtube. In addition to the delicious french toast from TheChicNatural (I wish i could take credit for it, but I cant!), I created a super healthy - but it doesn't taste healthy - smoothie! coconut water, spinach, and some other easy ingredients! On cold days, I don't want a smoothie, but i force myself to drink it. So, i guess the weather also dictates what i eat! lol The lunch i shared in this What I Eat! French Toast, Fries + Vegan Friendly video was flavorful but very simple! Since i only had two items, i eat LARGE portions! If you don't eat enough, you will CRASH and crave bad foods - i speak from lots of experience!

For dinner we used the phillips XL air fryer for the first time!! I was skeptical at first, because i discovered it on an informercial LOL! But we cranked it up, and put it to use as you saw in this What I Eat! French Toast, Fries + Vegan Friendly video. I was impressed with the texture and fluffiness, but crispiness (i guess thats the right word), on the outside. It had a bite to it, not mushy or dried out. I think every What I Eat video might feature this air fryer! We paired the stack of fries with salad topped with a creamy avocado dressing for me, and hubs had ranch, his favorite.

Why did i start making videos like this What I Eat! French Toast, Fries + Vegan Friendly one?Eating a diet filled with whole plants, low in fat and with simple ingredients, took me from a dark place of depression, lethargy, pain, anger and lots of ugliness to a brighter, pain free, fabulous looking body, lots of energy and a better attitude towards life state! That book, the starch solution saved me! No, i am not sponsored or paid to say that. Through these What I eat videos, I only hope that i inspire someone who is going through the same things i did.
