Hey Guys & Dolls! I'll be back to making regular videos very soon, but this flu & the aftermath are really kicking my behind! Today I just wanted to give you an update on my health, as well as follow up about the cosmobody challenge that I mentioned last month. I'm also sharing my favorite rainbow salad- let me know if you want to see more cooking & food videos ^_^.

Rainbow Salad
3 cups baby red chard & spinach
1tbsp roasted, unsalted sunflower seeds
4 tbsp english cucumbers
3/4 cup red cabbage
3/4 cup heirloom rainbow carrots
1/2 cup halved cherry or grape tomatoes
1/2 avocado
1 oz feta
1/3 cup chopped chicken breast
2 tbsp light dressing (I like this with champagne, or poppyseed)

The Tea is unsweetened black tea ^_^

Calories- Give for take a few about 500. This is a big salad- and it's chock full of whole, nutrient dense foods, fruits, veggies, healthy fats and proteins. If you eat this all at once it will keep you full for hours and help you avoid unnecessary snacking. I normally eat this as a huge lunch or I'll break it down into to smaller meals, depending on what's going on that day. The bottom line is it's freaking delish, and I'd love to know if you try it!
