So I've had an ombré/bayalage on my medium brown hair I would say my hair is very warmed toned, a few days ago I dyed my hair dark brown (brown/black) and now on top my hair has a red/orange tint to it where my hair just looks burgundy.. I wanna try using purple shampoo to take out the brassy ness but I'm not sure if it'll just bring back my ombré which I don't want! not sure what to do.

Using box colour on your hair can give you unwanted results most of the time :(
You may have picked a dark brown that had a lot of red undertones which would bring out the burgundy/warm tones in your hair. To counteract that you should go with an ash brown (green based) to cool down the red tones.
Keep in mind that bleaching your hair makes your hair very porous and therefore it won't hold colour very well for very long, and can also contribute to unwanted tones showing up when colouring over it!

What Jess said! Also, purple shampoo won't really change the tone if your hair is dark. And since you coloured over top of the ombré, nothing you do with bring it back except bleaching it again. Shampooing it enough over time will fade the color and you might notice it getting slightly lighter (that's what happened to me) but it was very very subtle. So you don't need to worry about your ombré coming back when using a purple shampoo, but I personally wouldn't use it since it won't give you the results you are looking for.

You can try using an ash toner, or a red-removing protein treatment. Either one will help get rid of the brass.
