Beauty Detox: Nuts for Nuts!

Rather than buying an unhealthy, fatty dip or dressing for your next picnic, why not make your own? Celebrity nutritionist Kimberly Snyder shares her recipe for nut paté, a delicious dip that is full of collagen-building, antioxidant-filled ingredients. "Turmeric acts as a powerful anti-inflammatory antioxidant that aids in digestion of fats," explains Kim. "Lemon adds collagen-building vitamin C, and nutritional yeast provides many of the B-complex family of vitamins, which are important for energy and shiny, healthy hair.” This tasty paté is also a great way to get your fill of omega-3 rich nuts without dousing them in sugar or honey.

Beauty Nut Paté

INGREDIENTS
  • 2 Tbsp fresh lemon juice
  • 1 ½ Tbsp low sodium tamari
  • 1 small organic zucchini, chopped (about ¾ cup)
  • 1-inch piece of ginger root, peeled and grated
  • 1 small garlic clove or ½ medium clove, finely chopped
  • 1 heaped Tbsp chopped white onion
  • 1/8  tsp cayenne pepper
  • 1 heaped Tbsp nutritional yeast
  • ½ tsp turmeric
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ½ cup almonds
DIRECTIONS

Soak the almonds, pumpkin seeds and sunflower seeds overnight and rinse well before using. Put the lemon juice and tamari in a food processor and blend well. Then, add the zucchini, ginger, garlic and onion and blend again. Lastly add the cayenne pepper, nutritional yeast and turmeric and blend until smooth.

Add the seeds and nuts once the liquid mixture is smooth, and blend again. Continue to push the mixture down the sides of the blender to keep it moving. If your blender is weak, you may have to chop the nuts up before adding them to the liquid mixture to ensure that it blends well. Enjoy by scooping on top of a green salad, or as a dip.
