I get REALLY dark in the sun, and the days are getting hotter here so I can't wear my usual cover everything attire.

Make sure you're wearing and reapplying SPF, and also make sure that you're staying in the shade when possible. That's about all you can do to prevent it short of covering your whole body.

I'm from AZ and I'd recommend trying to keep shaded with a hat or something and high SPF sunblock.

Besides wearing and reapplying spf the only thing I could think of would be to buy a sun hat or a parasol. I used a parasol during the majority of my trip to Mexico last year and didn't get a single burn on my fair skin, they really help.
