-6 egg yolks
-6 tbsp. sugar
-1 1/2 vanilla beans, split lengthwise
-1 1/2 cups whipping cream
-6 tbsp. (packed) brown sugar

-Preheat oven to 325 degrees.
-Whisk yolks and sugar in a bowl.
-Scrape in seeds from vanilla beans, gradually whisking them into cream.
-Divide mixture among 6 ramekins.
-Arrange dishes in 13 x 9 x 2 pan.
-Pour hot water into pan to come halfway up sides of ramekins.
-Bake custards until set in center, about 40 minutes.
-Remove ramekins from water, chill overnight.
-Preheat broiler.
-Sprinkle 1 tbsp. brown sugar onto each custard.
-Place ramekins on baking sheet and broil until sugar starts to caramelize, about 2 minutes.
-Chill until topping hardens.
-Garnish with raspberries.
