
Eating well not only shows through your skin but also affects your weight, mood, and energy levels. It should come as no surprise, then, that we encourage our Beauties to maintain a healthy diet. In order to make it even easier, we’ve enlisted the help of celebrity nutritionist Kimberly Snyder, author of The Beauty Detox Solution. Each week, Kim will give us a wonderful new recipe to include in your diet. This week, it's Israeli Couscous. All of the ingredients are wonderful for your skin and body, and this dish is yummy too! "Cucumber is high in silica, which contributes to beautiful skin and healthy, shiny hair and nails," says Kim. "Parsley is a natural diuretic, which will help flush out your kidneys and purify your blood, which is important for a healthy, gorgeous glow, and lemon should be a daily staple! It is full of collagen-building vitamin C and also supports liver tissue, which is your main detoxifying organ. It’s an all-around alkalizing dish that I recommend you have for lunch or dinner along with something denser, like avocado, hemp, sunflower or other seeds, or soup."
Israeli Couscous

1 large cucumber, diced (Peeled, if desired)
-
3 large tomatoes, diced
-
1 large zucchini, diced

1 cup chopped white onion
-
1½ cups chopped parsley

3 Tbsp chopped mint
-
2 Tbsp olive oil
-
4 Tbsp fresh lemon juice
-
1 tsp freshly ground black pepper

Celtic sea salt, to taste (optional)
Place the diced cucumber, tomatoes, zucchini, and onion in a large bowl. Add the parsley and mint, and mix well. Add the olive oil, lemon juice, black pepper, and Celtic sea salt. Mix and adjust the seasonings to taste. Enjoy!
